Vinho Regional Transmontano

Colour
Powerful light brown color, with nuances between orange and amber

Nose
Yellow fruit compotes (quince, pear, apple), and other dried fruits, like chestnut and nut. Hay freshness. Ethereal and complex. Light earthy, resines, fine cedar notes and dried powdered spices.

Taste
Complex bouquet with notes of phenolic flavours (cinnamon, clove). Full body and good persistence. Dry, crisp acidity. Soft. Good finish, with a powerful aftertaste reminiscent of old white fortified wines and chestnut marmalade or marron glacé.

Pairings
It is a complex and delicate orange wine (curtimenta). Its versatility makes it possible to harmonize well with fresh and wild mushrooms, as well as succulent or rich dishes (feijoadas and cassoulets), cod and game birds. Goes well with vegetarian dishes. Some “connaisseurs” recommend this wine for a peach pie or a “Tart Tatin”.

Colour
The rosé has a pink color with salmon nuances. Clean and bright.

Nose
It has a delicate and attractive aroma. It has a soft mineral touch, slight ripe red fruit.

Taste
Touch of red fruits like strawberries, raspberries and citrus. Good body, and good persistence. Dry, with firm acidity but soft. Good finish.

Pairings
A versatile wine, for light appetizers, charcuterie, sea food entries, or white meats. Sushi, Sashimis, Carpaccios & Meat tartars. Light soft cheeses. Ideal for mediterranean foods.

Feito de JOA

The Portuguese company Tree Flower Solutions and Casa do JOA have launched the world’s first certified wine with chestnut extract, a natural product for the protection and preservation of wines.

Casa do JOA collaborates with the Polytechnic Institute of Bragança and other university institutes on innovation and development projects related to wine and vineyards. TFS is a company dedicated to research and development, production, and commercial exploitation of natural preservatives for the agri-food industry, especially in beverages, including the wine industry and its derivatives. Casa do JOA has been a partner of TFS since 2021 and is part of the development team for various products, including chestnut extract.

The chestnut extract is an innovative 100% natural product, patented both nationally and internationally (No. 17726998.2), with high preservation, antioxidant, antimicrobial, and stabilizing properties, obtained from the chestnut tree flower (Castanea sativa Mill.).

The advantage of using this ingredient lies primarily in the complete elimination of sulfite additives in wines, allowing producers to obtain wines that better express their Terroir and fall within the ‘Natural’ approach. Furthermore, this natural preservative ingredient also provides added value for consumers, as they can enjoy a wine with the same physicochemical and sensory characteristics but healthier and without added sulfites.

Processo
The entire process of viticulture and winemaking for the wine adheres to organic and natural treatments. Indigenous yeasts naturally present are used, without the addition of enzymes or other oenological products. The wine is protected by the addition of chestnut flower extract.
